Directions

  1. Preheat oven to 180C. Defrost spinach and squeeze of extra water, chop.

  2. In a bowl mix the yoghurt, eggs and cinnamon, season with pepper. Stir till properly mixed. Add spinach and stir to mix.

  3. Slice (no have to peel) the candy potato into skinny rounds.

  4. Evenly spray a baking dish with cooking oil.

  5. Spoon 1/2 of the tinned tomatoes into the underside of the dish. Layer with 1⁄2 of the candy potato slices and prime with half the yoghurt and spinach combination. Add one other layer of tomatoes and candy potato and prime with remaining yoghurt combination. Sprinkle with grated cheese.

  6. Cowl the baking dish loosely with foil (don’t let it contact the shredded cheese on prime) and place the dish within the preheated oven.

  7. Bake for 45 minutes then take away the foil for a last quarter-hour of baking.

  8. Sprinkle with chopped parsley to serve.
