Watermelon Mojito Recipe – Teaspoon of Spice

Watermelon Mojitos

Watermelon Cocktails: Half 2  (right here’s half 1 together with my Watermelon Margarita recipe and the way I acquired on this watermelon drink kick a couple of weeks in the past.)

So, the mojito is basic Cuban cocktail made up of white rum, sugar, mint, lime and seltzer. A divine bevvie in the course of the warmth of summer time for certain. I made this one as a result of I needed an alternative choice for many who aren’t keen on tequila (there’s usually a not too nice story that goes together with individuals who fall into that group.)

This proved to be one other watermelon cocktail winner. As a result of the watermelon is so candy naturally, I skipped including the straightforward sugar syrup. You could possibly simply make this with some other fruit juice – like The Spicy RD’s Cantaloupe Mojito (EA posted this simply days earlier than my watermelon model, which I really like as a result of usually we’re on the identical meals “kick” on the similar time! To not point out, she has superb recipes on her weblog – all gluten-free.)

  • 3/4 cup watermelon juice (pureed and strained)
  • 5 mint leaves
  • Juice from 1/2 of a lime
  • 1.5 ounces white rum
  • 1/4 cup seltzer or glowing water
  • Mint sprigs

  1. Pour about 2 tablespoons of watermelon juice right into a glass. Add mint leaves and muddle the mint (press down with a muddler or a spoon) till the leaves are pretty bruised. Add remaining watermelon juice, lime juice and rum. Prime off with seltzer and serve with a spring of mint, if desired.

Notes

I discovered that a big watermelon yields about 10 1/2 cups of strained watermelon juice.

Cheers!
